Sautéed Pepper and Onion Tacos
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tbsp chili powder and ¼ tbsp cumin (or 1 tbsp taco seasoning)
  • 2 tbsp pickled jalapeno juice (you can also just use water)
  1. In a medium pan, sauté one sliced onion and one sliced red bell pepper in olive oil on medium-high heat.
  2. Once the onions are translucent add salt, pepper, cumin, and chili powder (or taco seasoning).
  3. My secret ingredient is adding a couple tablespoons of pickled jalapeño juice to the veggies at the end, but you can add water instead. This helps to bring the veggies and the seasoning together.
  4. Serve the sautéed veggies on corn tortillas with smashed avocado mixed with a little more pickled jalapeño juice or your favorite guacamole.
