Woo… This has been a busy, fun, and whirlwind of a week! This week was filled with so many fun moments and celebrations, which was filled with lots of eating out. Making the most of the days, combined with a very busy work week, led to an absence of daily snapshots. All in all, it was a great week given how much I ate out. Lets break it down (at least what I took photos of and remember)…
Monday was a very long work day! I wrote a daily snapshot for the day, sharing all of my meals.
Tuesday was a good day, though I remember being super scatterbrained. I ate out for lunch that day with a co-worker, ordering my favorite veggie sandwich at Wagshal’s.
Wednesday I went to OrangeTheory for the first time this week and kicked off Galentine’s Day. I started the work day with a staff breakfast, went to Cava with a colleague from the University of Nebraska, and then went on a Galentine’s date with my sister to see Isn’t It Romantic. It was a wonderful day, but filled with lots of eating out!
Thursday, Valentine’s Day, was a really fun day. Work was very busy, but I loved seeing my students and celebrating the day with them. Neal sent me an edible arrangement to work, which was really sweet! He also got me flowers and a card. We didn’t go out Thursday, which we were both A Ok with! Breakfast, lunch, and dinner were all home cooked and healthy. I felt good Thursday!
Friday was similar to Thursday. I started the day with coffee, after not making time to eat breakfast at home before leaving for the work day, and then ate lunch at my desk midday. Thursday and Friday I had a green bean, tomato, and mushroom stir fry with ground turkey. It was delicious! I don’t remember what we had for dinner Thursday or Friday, but both nights we were home.
Today, Saturday, started off with a coffee date with my sister. We picked up BBQ for lunch, which was delicious! I had lean brisket, green beans, and cheesy potatoes. For dinner we had homemade cauliflower pizza, which was awesome!
I am hopeful this week didn’t derail my diet. I got 4 awesome workouts in and tried to make good choices when eating out. Monday is our halfway point of the OrangeTheory Transformation Challenge, which is crazy!
