Today was the perfect end to this wild and weird winter weather week. We had an early release Tuesday, my kid’s schools were closed Wednesday, and then today we had an unexpected snowy day. I got both of my kids to school just find this morning, but then just before lunch I found out their schools were closing early. It made for a crazy day, but we all made it home safe, which is all that mattered.
I was very proud of my diet today. I was too busy at work to eat a snack between breakfast and lunch, but my lunch was very filling! Although I packed lunch, I went to lunch with a few colleagues, which was a lot of fun. I got two chicken and one beef kabob and a side salad. It was all delicious!
Dinner was also SO good! I made homemade turkey meatballs with ground turkey, kale, onion, egg, and almond flour. I then made a red sauce with lots of veggies, which I served over a brown rice pasta. I’ve been enjoying cooking so much these past few weeks and tonight’s dinner was definitely one of my favorites.
Breakfast – 2 eggs with avocado
Lunch – Chicken and streak kabob over salad with a side of hummus and dressing
Dinner – 3 homemade turkey meatballs, veggies, red sauce, and brown rice pasta
