What a weird winter week! My kids were off school today due to snow/temperatures, so Neal and I had to take turns taking care of them and working. I was really, really proud of my diet today, especially with the weird schedule! I cooked, I packed lunch and snacks, and I listened to my body. It was a good day!
Workout – 30 minute spin class
Breakfast – 2 eggs, veggies, avocado, and black tea
Snack – Smoothie made with mixed berries, kale, cashew milk, and collagen
Lunch – Brown rice, zucchini, and a kale and mozzarella chicken burger
Snack – Cottage cheese, blueberries, and a handful of almonds (not pictured)
Dinner – Naked burger topped with ketchup and mustard, lettuce, and 90 second bread
This was my first time making 90 second bread and I learned a lot. I am going to work on my technique and will share more about this bread. You can look it up on Instagram, but it’s essentially almond flour bread. I will say, it’s delicious!
