One of the things I loved most about San Antonio where the simple meals with big flavors!
My best friend and her family taught me to make many delicious meals, including these easy potato and chorizo tacos. These tacos are perfect for breakfast or dinner and make delicious leftovers for lunch. The added bonus? My daughter loves these tacos!
The recipe has 3 simple ingredients: 3 potatoes, 1 pound chorizo sausage, and 1/2 an onion. That’s it! You can add a little salt, but for the most part, the sausage flavors the entire dish.
To start, I brown the sausage in a large saute pan. About half way through the cooking process, I add in the chopped onion. Once the sausage is fully cooked, I remove the sausage from the pan and set aside. The great thing is, this recipe does not need added oil in order to cook down the potatoes as you can just use the leftover fat in the pan from the sausage.
For the potatoes, I like to diced them into small cubes. You’ll add the diced potatoes to the hot pan with the chorizo fat and will cook them down until they are cooked through. I like to stir them every few minutes in order to ensure that they cook evenly. Another option is to roast you potatoes in the oven and then to add them to the chorizo to marry the flavors. I personally think they’re more flavorful if you cook them in the pan, but either cooking method will work.
You can serve the potato and chorizo tacos mixture a variety of ways, but I personally love using corn tortillas and topping with either homemade pico de gallo or pickled jalapenos. Other options include serving the mixture over a bed of lettuce, in a flour tortilla, or with scrambled eggs. It’s all delicious!

- 3 russet potatoes, cubed
- 1 pound of ground chorizo sausage
- ½ onion, diced
- In a large saute pan, brown the chorizo sausage with diced onion.
- Remove the sausage and onion from the pan and set aside.
- In the same pan, cook the potatoes until soft in the leftover chorizo fat.
- Return the sausage and onion mixture to the potatoes and stir to combine.
- Add salt and pepper to taste, as needed.
- Enjoy!
