We had such a wonderful weekend as a family!! I wish we had another day together but we’re all back to our weekday routine. I kicked off the day today with an OrangeTheory class, which is exactly how I kicked off my Friday. Our next few weeks are a little hectic, so I want to make sure I give my all in my workouts before our schedule gets crazy.
After my OrangeTheory workout on Friday I had breakfast at home (12sp), got ready for the day, and then began my commute. Fridays, especially in the summer, are amazing traffic wise. The roads are quiet and my commute always goes by quickly. Another reason it’s one of my favorite days of the work week!
For lunch on Friday I met up with a co-worker and ate at the dining hall on campus. It was a really yummy lunch and I counted it as 26sp. It was so nice getting away from the office and having that time to catch up. The rest of the workday went by really quickly and I couldn’t wait to pick up Magnolia after a long week.
My lunch on Friday was so filling that I didn’t end up eating dinner. I had some popcorn once home (5sp) and called it a day. Eating 2 meals for the day ended up being my trend for the weekend.
Saturday morning we woke up early and headed to Virginia to drop Theodore off at the groomer. We then met up with my dad for breakfast at Ted’s Bulletin. I ordered the biscuits and gravy, my favorite, and enjoyed half. I calculated the meal as 19sp and packaged up the rest. We went for a long walk on the W&OD Trail after breakfast and then picked up Theodore from the groomer. Once home, we all took a glorious THREE hour nap!! It was magical.
Since we didn’t have lunch, we were all pretty hungry when we woke up at 3:30PM. I went ahead and started dinner early and made these killer stuffed jalapenos.
I bought the jalapenos at the Olney Farmers Market last weekend and planned to make them with the Trader Joe’s buffalo burger patties I had in the fridge.
-8 large jalapenos
-1 block of 1/3 fat cream cheese (room temperature)
-1/4 cup of shredded pepper jack cheese
Slice the jalapenos in half and remove the seeds and ribs from the inside of each jalapeno. I personally wear gloves when I do this. Next, combine the cream cheese and pepper jack in a bowl. Using a small spoon, fill each of the jalapenos with a spoonful of the cheese mixture. Place the jalapenos on a non stick baking dish and place in a pre-heated 400 degree oven. Bake for 15-20 minutes, until the cheese is toasty and the jalapenos are soft. This recipe ends up being 2sp per jalapeno (2 halves) and they are delicious!
I enjoyed my buffalo burger topped with 2 stuffed jalapeno halves (21sp for dinner). Such a yummy meal!!
Yesterday morning we all slept in until 7:30AM and then had breakfast (11sp). While Neal went on a long run, Magnolia and I headed to the Olney Farmers Market and to Costco. At the farmers market I bought an eggplant, a few zucchini, tomatillos, poblano peppers, and some more jalapenos for the week ahead. I also found this amazing piece of art at the farmers market and couldn’t pass it up. Dettas Delight hand paints on recycled crab bushel lids, which is really neat. I’m excited to hang this up in our house.
After shopping at Costoc, we picked up a cheese pizza from Costco and ate lunch as a family once home. I had 1 large slice of cheese pizza and counted it as 22sp. Well worth the points! After lunch we put Magnolia down for her nap and get various things done around the house. I organized our storage room/laundry room, did 2 loads of laundry, and prepared my work to do list for the week ahead.
After Magnolia’s nap, I prepped my zoodles for the week ahead, made another batch of eggplant stir fry, and baked a pan of brownies. We then went on a long walk as a family around the lake and came home to make Magnolia dinner and to start her bedtime routine. I wasn’t in the mood for dinner, so I waited until Magnolia went to bed and used the last of my points to have a square of brownies and a Yasso popsicle (12sp). I ended the day using 5 weekly points.
We had a really wonderful weekend and I was sad to see it end. I have sooooooo much to accomplish this week and hope I’m able to get everything done before the weekend. Here’s to a great week and my 10th week on Weight Watchers!
