Yesterday I was able to spend a day at home with Magnolia as her daycare was closed. It worked out perfectly as I was really missing Magnolia after 4 days in Dallas for work. Magnolia and I woke up around 7AM, got ready for the day, and headed downstairs to have breakfast. I made eggs with avocado for Magnolia and made myself egg whites (1sp) and then topped 2 slices of Pepperidge Farm Light bread (2sp) with 3 Jimmy Dean turkey sausage links (3sp) and raspberry jam (2sp). It might sound weird, but it’s delicious! I also had a banana (0sp), well half of one since Magnolia wanted some.
After breakfast I met with a contractor to talk about building a deck off the back of our house (yay!!). I’m excited to see what options we have and what it’ll all look like if we move forward. Around 11AM we met up with one of Magnolia’s daycare pals and went for a walk around the lake and to the park. It was awesome.
Once home, I made Magnolia and I lunch. I have a bunch of Lean Cuisines in the freezer from when Neal’s mom was in town, so I beefed up one of my favorites.
This enchilada dish is really yummy, but as I learned last week, it just isn’t filling. I decided to make some salsa cauliflower rice to beef up the dish.
In a bowl, I combined a bag of Trader Joe’s cauliflower rice (0sp) with 1 cup of salsa (0sp). I then microwaved it for 2 minutes and combined.
Next, I added in two wedges of Laughing Cow Cheese (2sp). I microwaved for another 3 minutes and stirred in the melted cheese.
After microwaving the Lean Cuisine (8sp), I plated everything. I placed half of the bowl of cauliflower rice on the plate (1sp) and then topped it with the corn from the Lean Cuisine and then the enchilada.
I mean come on, how delicious does this look for 9sp? After lunch, Magnolia took a long nap and I spent some time clearing out my inbox and watched two episodes of The Walking Dead. I’m addicted (and want to finish season 5 before OITNB starts Friday!!).
After Magnolia’s nap we headed to Giant to pick up groceries for the week. I was SO excited to find the Triple Zero is a jumbo size!! Perfect for my smoothies.
We closed out our day together with a long walk around the lake with Theodore. We were going to wait for daddy to get home, but Magnolia got Theodore riled up by saying “walk!” 1000 times.
For dinner, I tried some of the new Chobani Meze Dip, which I found at Giant. It is so delicious and just 1sp! I had it with 8 pretzel thins (4sp) and a large salad (lettuce – 0sp, rotisserie chicken deli meat – 2sp, ranch dressing – 4sp, croutons – 2sp). For dessert, I had a pint of HALO Lemon Cake ice cream. I had 13sp left and used 9sp by eating the pint. I closed out the day with 4 leftover SmartPoints, but I was really satisfied.
It was a really nice day at home with Magnolia! I’m recharged, refreshed, and feeling oh so loved after 4 days in Texas. It’s good to be home.
