Good morning from Saint Paul! I’m in the final stretch of my stay here, but I’ve had a really wonderful time.
Wednesday morning I started the day with a run around the city with my friend Nicole. We started along the river and then made our way around downtown.
We didn’t follow a set pace or run/walk interval, but seemed to run for about 5 minutes before walking for 1 minute. We had a really great time and enjoyed exploring the city.
I had a Starbucks cold brew to start the day and then enjoyed a Zula Green Splash during my first conference event.
For lunch on Wednesday I ordered a caprese sandwich at Public Kitchen + Bar. Wednesday night I met up with coworkers at Rival House (spicy chicken pizza for the win!).
Thursday morning our conference had a late start so we headed over to The Buttered Tin for brunch after I worked out in the hotel gym (30 minutes on the elliptical). The restaurant was packed but the food was really amazing! I ordered a cold press coffee and the biscuit, egg, and gravy.
Later that afternoon I had a Lemon Skinny from Zula, which had a great kick to it! That juice, along with a 2 mile walk around the city, made for a perfect pick me up.
After some great conference sessions on Thursday we ended the day at the Science Museum of Minnesota. We walked around the museum and then grabbed dinner (wild rice veggie burger for me) before heading back to our hotels.
Today is the last full day of the conference and then I’ll be heading home on Saturday. I’ve had a wonderful time here and have learned a lot. I can’t wait to see my family tomorrow morning!
