I don’t know about you, but when the summer heat settles I crave all things liquid! Ice water, peppermint iced tea, margaritas, and a whole lot of smoothies! In the past, most of the smoothies I’ve made were yogurt based. This year I’m trying to drink more fruit and veggie based smoothies and to let those ingredients shine. Not that there’s anything wrong with yogurt, but I’m finding other ways to get healthy probiotics in my body. I have always loved adding coconut water to my smoothies, so when I found the GoodBelly Coconut Water I got the best of both worlds. Coconut water and probiotics!
This Pineapple Cucumber Kale Smoothie is so light and refreshing, perfect after a day at the pool, an early morning run, or as a breakfast alternative. The ingredients are simple and full of nutrients!
- 1 ½ cup GoodBelly Coconut Water
- 1 ½ cups pineapple cubes (fresh or frozen)
- 1 cup chopped cucumber
- 1 cup kale
- 4 fresh mint leaves
- Add all ingredients to your blender and blend on high until smooth. Pour into a glass and enjoy!

Enjoy!
