I haven’t been able to share many daily snapshots lately and thought a round up would be good. Here’s a look at some of the foods I’ve been eating these past few weeks.
Breakfasts – After finding Dave’s Killer Bread at Costco, I’ve been eating toast with almond butter and/or jelly a lot. Almond butter with sliced banana is probably my favorite combo so far. I’ve also been making AdvoCare Vanilla shakes for the road when I’m running late. I’ve been adding a little peanut butter powder to my shakes too which I’ve loved. Last weekend we had breakfast at Ted’s Bulletin after our 5K, which was delicious! Neal and I shared two dishes and took plenty home. It was a delicious meal!
Coffee/Spark – I’ve been cutting back on my coffee intake these past few weeks (crazy), only grabbing Starbucks as a treat (double crazy). I’ve been starting each morning with 2 glasses of water and either Apple Spark or Strawberry Mango Spark. I love drinking coffee, but I feel so much better when I drink Spark.
Lunches – A few weeks ago I found the Trader Joe’s riced cauliflower and have been eating it almost every day since. I’ve enjoyed it with other sauteed veggies and a protein. I’ve also been making more salads, which has been a great way to get more veggies in each day.
Dinners – Our CSA has been amazing this year! I try to make dinners that center around vegetables, adding in protein and carbs as side dishes. Some nights I’m not in the mood to cook, so I’ve been making tuna salad with canned tuna, Greek yogurt, celery, and diced apple. A few nights I’ve had a pb&j sandwich on the way to football practice, but only when I’m running late. Normally I like to have a light dinner before I get ready for practice.
