Today’s guest food journal is from one of my dearest friends, Melissa. Melissa and I met when we were 15 years old in San Antonio, Texas and have been great friends, through thick and thin. I’m so grateful to have her in my life and really respect her!
Hello everyone my name is Melissa. I’ve been a friend of Ashley’s for about 15 years (since high school). I am married to a wonderful Texan man who is in the Air Force and we have a four year old boy and 9 month old girl. I am a stay at home mom although I was once in the military as well but got out to be home with my son when he was born.
My mother at one time had gone to college to be a dietician and although she changed her major, nutrition is still an interest of hers and has become one of mine as well (although we both hate to cook). Because I hate to cook we usually eat easy meals. Breakfast usually consists of yogurt, cereal, oatmeal, eggs and veggie omelets,etc. Lunch even more simple: salads, PB&j, meat sandwiches, leftovers etc. And finally, my least favorite meal-dinner.
I never really know when my husband will be home and the kids are still little with an early bedtime. I believe in eating together as a family but the timing gets stressful and I am spent at the end of the day- not really looking forward to making a mess during the witching hour. I love ready made meats at Costco or crockpot meals and usually add a veggie and carb along with it-simple and fast! I like to eat whatever sounds good but am all about portion control and balanced workout. Life is hectic now with little ones but would love to get more in the kitchen to experiment later in life!! So here is what I ate one weekday…
Breakfast: quick oats with pear, cinnamon, pinch of raisins, and toasted pecans. With a cup of coffee (I like a lot of coffee mate creamer!)
Lunch was late this day after picking up my son from school and running errands so it was a snacky one. A serving of these delicious chips from Costco and colorful tomatoes both used to dip in trader joes humus. A handful of blackberries. Cheese stick. And my second cup of coffee for the day!
Dinner was also late because my son had an appointment and my husband had a meeting so it was just me after I put the kids down! Leftover spaghetti (wheat noodles, Kirkland sauce with onions and garlic added and aidells sausage), spinach-kale strawberry salad with Lemmon- garlic infused olive oil (delish!!!) and sea salt dressing with a sprinkle of this yummy qia seed cereal for crunch! And too it off with a glass of bino (Apothic is my fav!)
I also had a small ice cream in the afternoon while running errands as a treat for my son. It was from this cute little all natural ice cream shop. And after dinner I had a tiny hand full of chocolate and sea salt covered almonds to finish the last soon of my wine. Sugar is my weakness!
Confession: I really need to drink more water throughout the day! I am always on the go and have no hands to carry a bottle around. I leave a bottle in the car, couch and bedside but it’s hard to remember to drink!
About three times a week I go to a challenging yoga class and twice a week I run either on the treadmill or the beach path with the jogging stroller. I hope to work out more and more as my little baby gets older and both kids are in school. But this works for now.
