This week has been quite the whirlwind! Not a whole lot has changed since last week, but for some reason I feel like I have no time to get things done. The days are flying by, the evenings go by even faster, and I’m just exhausted.
Weeks like this are tough because I just don’t feel like I have a moment to reorganize myself and to shift my priorities. Everything is just go, go, go. I desperately need an hour to sit down with a cup of coffee and to brain dump! Thankfully there are just 2 more days until the weekend and it can’t come fast enough!
This weekend I’m getting my hair cut, grabbing lunch with a friend, taking spin classes, and then locking myself in my house in order to get some chores done while adoring my daughter. I’m seriously slacking in the chore department! I’m pretty sure I’ve been living out of a clean laundry basket for 2 weeks now and it’s only clean because my amazing husband has been a laundry king!
I don’t realize it until I’m halfway through the week, but I’m so grateful for the prep I do each weekend for the week ahead. It ends up being the foundation that gets me through the week.
A few weeks ago I made these make ahead breakfast burritos, which have been fabulous for breakfasts and dinners. This week they’ve come in handy for my husband as he races out the door each morning.
Ingredients (for 5 make ahead burritos)
-5 tortillas
-10 eggs, scrambled
-10 turkey sausage links, defrosted and sliced
-5 Laughing Cow cheese wedges
To start, spread 1 Laughing Cow cheese wedge on a tortilla. I personally like to spread the toppings evenly, so I work on all 5 tortillas at the same time instead of making 1 at a time.
Next, top the tortillas with eggs and sausage.
Lastly, fold the burrito and wrap in plastic wrap.
These burritos are so easy to make and really come in handy when you’re rushing out the door. I like to freeze the burritos and reheat them in the microwave as needed. I simply unwrap the burrito, place it on a paper towel, and cook it for 2 minutes and 30 seconds on high (You may need a little more or a little less time depending on your microwave). These would also be awesome with some homemade pico de gallo!
