Hi everyone! My name is Becky, and I live in DC. I have been reading Coffee Cake and Cardio since the very beginning. I met Ashley while training for a half marathon in 2010. We were running buddies and spent hours talking, running, and bonding all through the winter months. Our friendship grew, and I even ended up being one of Ashley’s bridesmaids in her wedding! When Ashley first started her blog, I was excited to see another piece of her life. She is a truly wonderful friend, and I’m happy to contribute to her blog.
Breakfast: A bowl of Trader Joe’s Honey Nut O’s with skim milk and coffee with flavored creamer. Irish Cream flavor, mmm…
Snack: I made a roasted red pepper dip with a jar of roasted red peppers, Greek yogurt, cream cheese, sriracha, paprika, salt, and pepper. It made a TON of dip. I ate some of this with a serving of tortilla chips and some broccoli florets.
Lunch: Trader Joe’s Vegetable Masala patty sandwich. Whole wheat bread, a curry-mayo (or Miracle Whip, love it) “aioli”, tomato, pickle, and sauteed kale.
Snack: I roasted a whole spaghetti squash then sautéed it with anchovy paste, garlic, kale, and capers. Topped with a little grated Parmesan. I love making a bunch of food then eating leftovers throughout the week. (Ashley’s blog has been featuring this more and more, and I’m getting plenty of ideas!) This snack is DELICIOUS.
Dinner: Roasted sweet potato, ground turkey with poultry seasoning, salt, and pepper, salsa, and Greek yogurt. I saw this meal years ago on The Biggest Loser and have become obsessed with it as a quick go-to.
Dessert: Glass of sweet red wine. This is wine really is sweet enough to substitute dessert. A nice, sloooow drink. :)
