Boy was it nice to have a LONNNNG weekend! After working last Monday – Wednesday I was so thankful to have 5 days off and to be home with Magnolia. Our Thanksgiving was awesome. We kicked it off with a 5 mile Turkey Trot and then headed over to a friend’s house for dinner. Celebrating with Magnolia was so fun and it made me look forward to the years when we can host Thanksgiving ourselves and invite friends and family over to celebrate.
The rest of the weekend was spent on projects, including lots of recipe development and cooking! I’ve realized that I don’t share a lot of my recipes with y’all here on Coffee Cake and Cardio and I want to change that. I’ve always been a “little of this, little of that” kind of chef, but there are some dishes that are just too good not to share. I’ve updated my recipe page for y’all, nothing fancy, and hope to share more of what I’m eating with y’all and how I made it.
This weekend German Chocolate Date Balls, which can be taken to a holiday party, thrown in your purse for a late afternoon snack, or they can be served after dinner as a dessert. They’re incredibly easy to make, super healthy, and taste divine!
German Chocolate Date Ball Ingredients
- 15 pitted dates
- 1/2 cup raw pecans
- 2 tbsp cocoa powder
- 2 tbsp shredded coconut
- 1/2 tsp vanilla extract
- pinch of salt
The easiest way to make these date balls is to use a food processor. Simply add all of your ingredients to the food processor and blend until all of the ingredients are fully combined. This usually takes a little less than a minute.
Next I use a cookie dough scoop to form the dough into balls.
