The other day I was scrolling through Instagram and I couldn’t help but feel inspired! My fruit and vegetable intake these days has been really bad and scrolling through Instagram helped me to see not only what others were eating but also what I used to eat!
My meals these days consist mainly of bread, some form of protein, and dairy. Complex carbs, fruits, vegetables, and healthy fats have been pretty non-existent because well, they either aren’t in our house or I haven’t had/made time to cook. Right now we have zero veggies in our house because I’ve yet to go grocery shopping for the week and I didn’t do any food prep for the week with the foods we do have (cooking oatmeal or grains for example) because I use nap time for it. With limited time, energy, and groceries I’ve automatically turn to grab and go items, most of which aren’t balance. Take today for example. So far today I’ve had:
- Breakfast – English muffin, 2 eggs scrambled with cheddar cheese, and a cup of coffee
- Lunch – English muffin topped with cheddar cheese, sliced ham, and yellow mustard and a Yoplait Greek yogurt
Neither meal was unhealthy but I’ve yet to have one vegetable or piece of fruit today and my carb intake is already quite high. On top of that, I’m not really eating enough food. While my breakfast and lunch were yummy and filling, eating enough calories at each meal has been a struggle for me. Long story short, I need to get my pantry, fridge, and meals in order!
It’s a little overwhelming but scrolling through Instagram was super inspiring and gave me a lot of ideas! It helped me to be able to look at meals others have made, like the AvocadoAthlete or BrittsBlurbs, and to see the foods I’ve made for myself in the past. I even scrolled through the #myffmeal hashtag and had a few “why didn’t I think of that” moments.
I know eating healthy doesn’t have to be complicated, but with limited time on my hands these days it’s overwhelming. It all starts with a plan and then executing that plan! I know I need to create a list of meal ideas, make a weekly meal plan for dinners (or a list of dinners we could have on any given day), go grocery shopping, and prepare foods ahead of time in order to keep me from having to cook each and every day.
Today I’m working on my meal ideas, creating a list of dinners for the week, and am hoping to get to the grocery store today! I’ll be sharing my list of meal ideas with y’all this week and look forward to getting back into the swing of things!
