Breakfast has always been my favorite meal of the day! I love that you can enjoy something sweet, something savory, or a combination of the two. Making breakfast is usually pretty easy too, which I love! Sure there are complicated recipes out there but for the most part breakfast foods are usually quick and easy to make.
While I love pancakes, my favorite breakfasts are always centered around eggs. Eggs are so easy to make and I love all the things you can add to them! Last week I bought a rotisserie chicken and have been enjoying the meat at various meals. While I usually add rotisserie chicken meat to my lunches or dinners, adding it to breakfast is a great way to get even more protein into your diet at the beginning of the day.
I actually start this breakfast by sautéing 1 small zucchini (chopped) in coconut oil.
I then move the cooked zucchini to my plate and add the rotisserie chicken to the same pan.
Next I add 2 whisked eggs to chicken, cooking until the eggs are cooked through. I then season with salt and pepper.
I serve the scrambled eggs alongside the zucchini and add a toasted English muffin to the side (and a cup of coffee of course)!
So next time you have leftover chicken or are looking for a way to increase your protein intake at breakfast, consider adding chicken to your eggs!
