In case you missed it, Neal and I had an absolutely fabulous Saturday! Although we didn’t get to bed until almost 1:30AM, Neal and I both got up at 7AM to workout Sunday morning!! While I was at spin (55 minute class), Neal ran 8 miles!! To be honest, I’m really missing running and I can’t wait to get back to it this fall! Spin has been awesome, but I do miss how rewarding running is.
After spin I headed to the farmers market for an iced coffee and fresh veggies. Tomatoes, peppers, zucchini, eggplant, basil… summer at its finest!
After getting cleaned up from our workouts Neal and I headed to Honey Pig Gooldaegee Korean BBQ for lunch with Becky. Becky and I went to Honey Pig earlier this year, but we’ve been wanting to take Neal for a while now. Lunch was awesome and Neal had a really great time!
The rest of the afternoon was spent working on my third trimester to do list. Today I started packing my hospital bag, which honestly overwhelmed me. It’s a little too early to be packing, now that I’ve started, but it’ll be nice to have it done just in case. I’ll definitely share what I ended up packing with you guys in August.
For dinner, I whipped together a yummy summer inspired pasta dish. I sauteed cherry tomatoes in a little olive oil with chopped garlic for a few minutes and then added 2 cups of spinach. After the spinach had wilted down I added in a little salt, pepper, and red pepper flakes before tossing the veggies with Delallo whole wheat linguini and fresh chopped basil. It. Was. Awesome!
After dinner I settled in to watch Guy’s Grocery Games and Next Food Network Star and worked on this week’s meal plan. I honestly can’t tell y’all the last time I meal planned, mainly because it has been hard to know what I’ll want or need to eat each day. As we get closer to the baby’s arrival, I’m eager to get back to old habits and routine. I really enjoy meal planning, so it was fun creating a plan for the week ahead.

- Ground beef

- Chicken breasts
Breakfast (options for the week)
-Eggs with sauteed veggies and veggie sausage
-p28 bread topped with cashew butter and sliced banana
-Scrambled eggs with poblano peppers
-Monday: leftover summer pasta
-Tuesday, Wednesday, and Thursday: Taco fixin’ topped sweet potatoes (ground beef, tomatoes, avocado, jalapenos, and salsa)
-Friday: Work lunch
-Monday: Stuffed bell peppers
-Tuesday: Grilled chicken with sauteed zucchini
-Wednesday: Spaghetti squash with sauteed eggplant and chicken sausage
-Thursday: Date night
-Friday: Grilled chicken with brown rice and veggies
I’m really looking forward to the week ahead and closing out the month of July! I can’t believe August is already here. I’m so excited to be in homestretch of this pregnancy!
