I haven’t written a What I Ate Wednesday post in quite some time, so I thought it’d be fun to show y’all what I ate this past Sunday. As I shared last week, I’ve been trying to decrease my bread and dairy intake this trimester so Sunday’s eats are a great example of how I’ve been eating lately.
After my morning workout (10 minute run, 30 minutes of spin, and weight lifting) I enjoyed an amazing and filling breakfast. I sauteed 5 sliced mushrooms and then scrambled 2 eggs with them. Along side the eggs I had 1 slice of Ezekiel bread and a strawberry and raspberry fruit salad.
After breakfast, Neal and I ran to Costco and the grocery store. Costco was crazy, of course, but it was good to stock up on some of our necessities. I stayed away from all samples but did have 2 bites of Neal’s Costco pizza after we left (not pictured). Once home, I made a big salad topped with grilled chicken, cheddar cheese, croutons, and a homemade vinaigrette. It was perfect and super filling!
I usually have a snack around 3:30PM each day, but because I didn’t eat lunch until 1:30PM I felt good waiting until dinner. For dinner I made this amazing baked chicken and roasted cabbage.
I seasoned the bone-in chicken breasts with salt, pepper, and Weber’s beer can chicken seasoning and then baked it at 375 for 50 minutes. Alongside the chicken I made roasted cabbage with a chive-mustard vinaigrette which was the bomb dot com! The dressing is a keeper and one I’ve enjoyed on salads all week this week.
After dinner I had a handful of M&M’s and called it a day. Each of my meals were super filling and right in line with how I’ve been trying to eat.
