What day is it again?? I don’t know if it’s because it’s my first full week of work since the holidays, but this week has been such a whirlwind!
Even though it has been a crazy week, I’ve really enjoyed taking the time to try out new recipes for lunches and dinners. Yesterday I tried a new tangy tuna salad recipe and I absolutely LOVED it!
Too often I forget how much I love tuna salad, so when I saw this recipe from Everyday Food, I knew I had to try it! I made a few changes, like only using Greek yogurt instead of mayonnaise and I absolutely love it! I can’t wait to make it again!
Ingredients
4 TBSP plain Greek yogurt
1 tsp grated lemon zest
1 TBSP juice
1 can (5 ounces) solid light tuna packed in water
1 stalk celery, halved lengthwise and sliced
1/2 Granny Smith apple, chopped
Salt and pepper to taste
Instructions
Combine Greek yogurt, lemon zest and lemon juice in a small bowl. Stir in drained tuna, celery, and apple. Season with salt and pepper to taste. Serve with bread, crackers, or veggies like cucumber and carrots. Enjoy!
