October, November, and December are by far my favorite months of the year! I love everything about them! From puppy snuggles…
to pumpkin english muffins with pumpkin spice cream cheese…
to roasted squash…
and pumpkin beers galore! I love fall and everything that comes with it!
This time of year also turns me into a master chef (or something like that)! All I want to do is bake bread, roast vegetables, crank out cookies, and try out new soup recipes.
Last week Runner’s World sent me their new Runner’s World Cookbook and I just can’t stop going through it. From spice breakfast quinoa to grilled vegetable polenta casserole, the recipes in this cookbook combine a variety of real foods designed to help you fuel up and slim down.
Tonight for dinner I am making the potato-leek soup, which will also make perfect leftovers. This recipe, much like the others, is simple yet full of flavorful and nutrient rich foods.
