This past weekend was absolutely wonderful! I ran 10 miles, watched the Hawkeyes and Redskins win, and enjoying my first bowl of Pho!
My dear friend Erin and her husband Ben took Neal and I out for Pho on Saturday night. I honestly have no idea why I haven’t had Pho before now, but let me tell y’all, it’s amazing.
We started out with these delicious shrimp spring rolls and then buckled down and enjoyed big bowls of Pho. Pho is a Vietnamese noodle soup, usually served with various meats and vegetables, and if done right, it’s amazing I ordered the steak and Vietnamese meatball Pho soup and then added in lime, basil, and peppers. Such an amazing dinner!
Sunday I enjoyed the day with Neal and Theodore at home. It was great being able to rest my legs, clean my apartment, run errands, and work on some projects!
The week ahead is looking really mellow… and I’m thrilled! I’m excited to workout, eat healthy, and to spend some time at home. I have planned out Monday through Friday, but next weekend is a little up in the air.
