This past weekend was absolutely lovely! The weather was amazing and I was able to spend time with some great friends.
Neal and I kicked off the weekend with dinner at a friend’s house. My friend Erin made us an absolutely amazing meal! She made a shrimp and artichoke soup she had found on Pinterest, as well as bread and a side salad.
For dessert I brought a homemade strawberry and blueberry cobbler which was really yummy. I followed this recipe but cut the sugar and butter in half and added an additional cup of oatmeal. With the sweetness from the strawberries and blueberries you didn’t even notice the missing sugar.
Saturday morning I woke up and enjoyed a hot cup of Marylou’s Coffee (gosh I love this stuff). It was nice being able to sleep until 7:30 and to enjoy some time around the house before going on our long run.
The run Saturday went really well, though miles 2 and 3 kicked my butt. I ran the 4 miles in 47:04.05 and burned a little over 600 calories.
After some time around the house Neal and I drove to Virginia for a crab fest with some of my football teammates. Eating crabs has never been my thing, way too much work and it totally grosses me out, but I do love sitting around with my friends, drinking beer and laughing the hours away.
Sunday was no different, as Neal and I headed downtown for brunch with 2 more of my teammates at District Commons.
The weather was just amazing on Sunday, so we made our way out to the patio and enjoyed the hustle and bustle of the DC streets.
For brunch I ordered the roasted portobello mushroom topped with quinoa salad which was absolutely delicious!
On our way home, Neal and I crossed another thing off my summer to do list … picking up cupcakes at Baked and Wired! Georgetown was CRAZY, so I dropped Neal off and told him to pick out whatever he wanted.
Neal came out of the shop with 4 cupcakes (clockwise from upper left): The Flapjack, Texas Sheetcake, Unporked Elvis, and The Smurfette. Can you guess which two he thought I’d like? Well, he was right… I do love Texas and anything lemon!
I’ve spent a lot of time these past few weeks thinking about my health and wellness since meeting with Rebecca and although I’ve been a little quiet about it here, I’ve really been learning a lot about the balance and consistency I want to have in my life.
This weekend was a beautiful balance of getting great sleep, working out, eating a variety of foods, and enjoying every moment with my friends and loved ones. This is a life I can and want to get used to…
