This week Neal and I got our first box of vegetables from our CSA! I’ve been looking forward to this week ever since we signed up… I don’t know if I’ve ever been so pumped for produce!
Our CSA runs from this week until the week of October 28, 2013. For the next 24 weeks we’ll receive a 60% share of vegetables and a full share of fruits. We’ll also get a dozen eggs every other week.
This week we got a lot of GREEN! Starting in the upper left hand corner and moving clockwise we have…
- Spinach
- Butter lettuce
- Green leaf lettuce
- Kale
- Scallions
- Bok Choy
- Oregano (in the center)
I’m just so excited to get new produce every week and to not have to pick it out! To be able to eat seasonally really makes me happy and I’m grateful to be able to support local farms.
I have a few ideas up my sleeve for the bok choy and the kale this weekend and hope to enjoy the other produce in lunches and various dinners.
Last night for dinner I used some of the scallions and spinach from the CSA to make an egg and avocado salad sandwich.
- 2 avocados
- 4 hard boiled eggs
- 2 diced scallions
- 1 tbsp of light sour cream
- 1 tbsp of lime juice
- Tabasco (to taste)
- Salt and pepper (to taste)
To start, I added 4 eggs to a pot of cold water. I place the pot of the burner and bring it to a boil. Once the water starts to boil I set the timer for 10 minutes. Makes perfect hard boiled eggs every time!
While the eggs boiled I diced the avocado and added it to a small bowl.
To the avocado I added the sour cream and lime juice. Once the eggs had cooled I chopped them and added them and the scallions to the salad.
Lastly I seasoned the salad with salt, pepper, and Tabasco to taste.
I served the egg and avocado salad on Ezekiel bread and added a healthy bed of spinach to the sandwich.
Egg and avocado salad is incredibly healthy (and tasty) and was a great way to start using some of the produce from our first CSA box.
