Yesterday I had a really great day of eats. I planned ahead, packed food to take to work, and had a really delicious meal with Neal at home for dinner.
I started off my Friday with a cup of coffee. Instead of my usual Coffee-Mate though I added 1/2 a packet of Truvia and 2 TBSP of fat free half and half.
For eats I enjoyed 2 eggs, 1 egg white, and 1 orange.
Mid-morning I opened up a new bottle of Bragg’s Apple Cider Vinegar Apple-Cinnamon, enjoying 1/2 of the bottle (1 serving). These ACV drinks are awesome. Yes you can taste the vinegar but it’s subtle.
For lunch I had a salad, topped with 2 chicken breasts and some Bolthouse Farms Yogurt Blue Cheese Dressing.
This salad was delicious and filling! A perfect weekday lunch.
Around 3PM I had a FAGE Greek Yogurt with 15 drops of SweetLeaf’s English Toffee Stevia Sweetener. THE BOMB!
After work I ran into Whole foods and picked up 2 sweet potatoes and a filet of salmon. I sliced the sweet potatoes into slices, coated them with 1 tbsp of olive oil, and seasoned with salt and pepper. I then roasted them at 400 degrees for 30 minutes.
For the salmon, I dusted it with McCormick’s Fiesta Citrus seasoning and baked at 400 degrees for 20 minutes.
The salmon came out of the oven juicy and full of flavor.
It was a perfect day of eating for me. I enjoyed everything I ate and had a great balance of protein, fat, and carbs.
