After an incredibly long day at work yesterday I wanted to come home, cook a quick dinner, and relax. Quick dinners don’t always equal healthy, as I tend to go into this unhealthy brain freeze rushing to find something fast to eat.
Instead of throwing together a quesadilla last night, I took a few minutes to think about my options and to come to the realization that although it’d take a little more time I’d much rather have a higher nutrient and higher quality dinner than a quesadilla.
I started my dinner by dicing up 2 chicken breasts, one for me and one for Neal, and seasoned them with Italian seasoning and extra crushed red pepper flakes.
While the chicken cooked I boiled 4 oz of Delallo whole wheat orecchiette for 11 minutes.
To pull the chicken and the pasta together, I heated up Delallo’s tomato and basil marinara sauce for about 5 minutes.
Although it took a little more time, my dinner last night was just what I needed. I served myself 2 oz of pasta (5PP), 1/2 cup of marinara (2PP), and 1 chicken breast (4PP) (I ate a few of my pieces before adding the rest to the dish).
For dessert, I whipped together a delectable Pumpkin Cheesecake pudding! A few weeks ago I saw this little beauty at the grocery store and knew I had to make something fun with it.
Although I really wanted to make a pie with this, I decided a simple pudding treat was the way to go (keeps the points low).
For the pudding I combined the pumpkin spice pudding powder with the sugar free cheesecake pudding powder. I then added 4 cups of ice cold skim milk and beat on high for 2 minutes.
After chilling the pudding in the fridge for 1 hour, I served 1/2 cup in a bowl.
I could totally see myself serving this along with some graham crackers and/or apples. I ate it plain last night for just 3PP.
My healthy carb loading went really well last night and I was extremely happy to have stayed within my Weight Watchers points.
Tonight Neal and I are running the Glow in the Dark 5K here in DC and then I have my first women’s football practice tomorrow morning! It’s going to be an active weekend, but I’m pumped! Happy Friday!
