What a transitional week… but a good one at that. This week went from being really injured to being somewhat injured to being stiff but feeling better. For being the week after injuring my back I was pretty happy to have been able to workout as much as I did. I am looking forward though to healing more and more each day as I’m ready to get back to spin and tap class.
Monday – Rested
Tuesday – 1 mile walk to work, 1 mile walk to metro, and a 2 mile run on the treadmill.
Honestly, I was so ready for a good workout by Tuesday night. I was frustrated and took it out on the treadmill. It felt great to get a good a good run in.
Surprised how little I sweated though. Do you ever feel like the back of your shirt has got to be soaked only to find it looking like this? … And you’re bummed about it? Sweat = Proof in my head.
Wednesday – 20 minute AM Yoga
Thursday – 2 mile run/walk on the treadmill
Friday – 2 mile walk
My meals this week were also great and on point. I focused on my basics and tried to stay positive since the week started out with a lot of thoughts and emotions.
Last night for dinner I had planned on making tacos but those quickly turned into me inventing a random dinner….
Mexican Rice and Bean Casserole
My brain storming all started with this pack of seasonings. You see, I think I bought this a year or so ago and still haven’t used it so I figured it was time to make the most of it. Although I didn’t follow the recipe card, I figured the seasoning would be perfect for my invention.
I started by sauteing onions and fresh diced tomatoes.
I then added ground turkey and browned it.
Next I added the seasonings from the casserole seasoning pack. The seasonings included cumin, chili powder, red pepper flakes, oregano, and dried onion.
Next I added 3 cans of beans; pinto beans, pink beans, and black beans and allowed them to cook down with the onions, tomatoes, and ground turkey.
Now for the fun part. Normally I would just use the mixture in tacos or on salads but last night I decided to create a “casserole”. I first added half of the meat mixture to the bottom of a casserole dish.
Next I added a light layer of fat free kraft cheese. Now I am NOT a fat free cheese fan but Neal is on this FF Kraft kick these days. So far I’m not winning this battle so I’m just rolling with it.
Next I added a layer of cooked rice (Trader Joe’s brand made with water and chicken bouillon).
I then added another thin layer of cheese and then topped with the remainder of the meat mixture.
Random dish?? Yes, but I know the flavors Neal and I love and figured a different take on it wouldn’t hurt.
Neal absolutely loved the dish and I thought it was great. Topping it with fat free Greek yogurt and pickled jalapenos made it fantastic.
