It’s hard to believe that I’m going on my 4th week of meal prepping, but I’ve got to say, I’m really loving it. It’s a lot of work, cooking everything on Sunday, but it takes a lot off my plate on weekdays. It’s so nice not having to think about what I’m going to eat, how many calories/Points are in each food, or how I’ll find the time to cook. Everything is prepared and ready to go!
This week’s meal plan inspiration came from Pinch of Yum’s The Creamy Cauliflower Sauce Cookbook!! I’ve been trying to find more ways to incorporate vegetables and protein into my diet and this creamy cauliflower sauce sounded too good to be true.
I made the sauce Sunday morning and boy was it easy! I used half of the sauce for this week’s lunches and then used the other half to make biscuits and gravy, except the gravy was cauliflower sauce. Let me tell y’all, you’d NEVER know! Neal could not believe that the gravy was actually made from cauliflower! Let’s just say I’ll be making this sauce a LOT and plan to try out all of the recipes included in the cookbook!
Now, one thing you’ll notice about this week’s meal prep is that I counted calories instead of Weight Watchers Points. As I mentioned on Friday, I decided to switch to Weight Watchers at Work and as a result I’ve had a lapse in accounts. I’m really hoping it all gets worked out early this week, but for now, I’m counting calories in My Fitness Pal.
It’s honestly a blessing in disguise. It’s kinda nice seeing how many calories I’m eating and the macro nutrient breakdown of my diet. I actually tracked my food journal a few weeks ago in MFP and it helped to see how many carbs I was eating vs protein. This week my goal is to up my protein intake!
Breakfasts – 1/2 cup oats, 1 cup Silk cashew milk, 2 tbsp liquid egg whites, 1 banana, 1 Skippy singles – 582 calories
Lunches – Buffalo Chicken Zoodle Salads – 321 calories
Dinners – Cauliflower Sauce Macaroni and Cheese– 427 calories
Snacks – yogurt, cottage cheese, jerky, protein pancakes, apple, tuna, 2 eggs, dark chocolate mini – 798 calories
Total calories – 2,128
