-8 large jalapenos
-1 block of 1/3 fat cream cheese (room temperature)
-1/4 cup of shredded pepper jack cheese
Slice the jalapenos in half and remove the seeds and ribs from the inside of each jalapeno. I personally wear gloves when I do this. Next, combine the cream cheese and pepper jack in a bowl. Using a small spoon, fill each of the jalapenos with a spoonful of the cheese mixture. Place the jalapenos on a non stick baking dish and place in a pre-heated 400 degree oven. Bake for 15-20 minutes, until the cheese is toasty and the jalapenos are soft. This recipe ends up being 2sp per jalapeno (2 halves) and they are delicious!
I enjoyed my buffalo burger topped with 2 stuffed jalapeno halves (21sp for dinner). Such a yummy meal!!
