It’s no secret that my husband has a sweet tooth, so with St. Patrick’s Day around the corner and friends coming over to watch the BIG 10 Championship game (Michigan State vs. Wisconsin), I decided to whip up a batch of my St. Patrick’s Day Lucky Charms Marshmallow Treats.
In a large pan, melt the butter over medium heat. Add in the marshmallows and stir until melted down. Turn off the heat and add in the 6 cups of cereal. Stir to combine and immediately add to a greased 9×13 pan. The cereal and marshmallow mixture will stick to your spoon, so spray a spatula with cooking spray and use that to smooth out the cereal and marshmallow mixture.
Allow the marshmallow treats to cool for 1 hour at room temperature. Cut into squares and serve.
If you’re feeling fancy, melt 1/2 cup of white chocolate chips in a microwave safe bowl in the microwave. Stir the chocolate every 30 seconds until melted. Once the chocolate is melted, simply spoon the chocolate over the end of a marshmallow treat and decorate with sprinkles or leftover cereal. You can also add food coloring to the white chocolate for an extra effect.
Set each marshmallow treat on a cooling rack and allow the chocolate to harden before serving. Enjoy!
