For dinner last night, my mom made 2 of my absolute favorite dishes from my childhood: Mom’s meatloaf and twice baked potatoes!
- 1lb lean ground beef
- 1/4 large onion, diced finely
- 1 egg
- 2 tsp worcester sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp garlic and herb Mrs. Dash
- 2 slices of whole wheat light bread, torn into dime sized pieces
- 2 tbsp skim milk
Combine all ingredients in a bowl, kneading together with hands. Spray 1lb loaf pan with cooking spray and then add the meatloaf to the pan. Cook the meatloaf at 375 degrees Fahrenheit for 40 minutes. While the meatloaf bakes, combine 2 tbsp of relish with 2 tbsp of ketchup in a small bowl. When the timer goes off, top the meatloaf with the relish and ketchup sauce. Cook the meatloaf for an additional 10 minutes before serving.
Mom’s Twice Baked Potatoes
- 4 medium potatoes
- 1/4 onion, diced finely
- 2 tbsp butter
- 3/4 cup of shredded cheese
- salt and pepper to taste
Cook the potatoes (poked with a fork several times first) for 10 minutes in the microwave, turning once at the 5 minute mark. Allow the potatoes to rest for about 10 minutes before moving on. Next, cut each potato in half lengthwise. Remove the inside of each potato half, placing the insides in a large bowl. To the mashed potato, add in the onion, butter, 1/2 cup of cheese, salt and pepper. Combine well and then stuff the mixture back into the potato skins. Top the potato halves with the remainder of cheese and then place the skins on a baking sheet. Bake the potatoes for 15 minutes at 375 degree Fahrenheit.
Last night’s dinner was absolutely delicious and took me right back to being 8 years old! It’s funny how food can take you right back to an old memory or point in time!
