This past weekend I was incredibly spoiled by having my chef of a mom in the kitchen! I know everybody says this, but my mom is seriously an amazing cook. I’ve always been amazed by her skills in the kitchen and not so secretly hope that she’ll open up a bistro some day.
We kicked off Sunday afternoon with a few appetizers for the Iowa basketball game.
In the Vitamix my mom whipped up a batch of guacamole, which was SO EASY! In the Vitamix we combined 2 avocados, 10 cherry tomatoes, 1/2 cup of fresh cilantro, 1/4 cup of chopped onion, the juice of 1 lime, and salt to taste. After adding all of the ingredients to the Vitamix we simply pulsed the machine until the ingredients were chopped and combined. SOOO delicious and incredibly easy to make.
Around the kickoff of the Broncos and Patriots game, my mom and I started the homemade pizza dough for Sunday night’s dinner. To the bread machine we added (in this order):
- 3/4 cup + 2 tbsp of room temperature water
- 2 tbsp extra virgin olive oil
- 1 tsp of salt
- 1/2 tsp of sugar
- 1 3/4 cup of bread flour
- 1/2 cup of whole wheat flour
- 1 packet of dry yeast
We ran the bread machine on the dough cycle, which in my machine took 1 hour and 30 minutes (two rise cycles). After the dough cycle had finished, we divided the dough in half and rolled it out for two pizzas.
We topped the dough with pizza sauce, Italian seasoning, Parmesan cheese, mozzarella cheese, and then various toppings (pepperoni and veggies).
The key to my Mom’s pizza recipe is to bake the pizza at 500 degrees! This will cook the dough fast, allowing for a crisp pizza crust. Bake the pizzas for 12-15 minutes or until the crust is crispy and the cheese is completely melted.
Whether you use a baking sheet or a pizza stone, the pizzas turn out perfect!
Alongside the pizza we served a huge salad, which was the perfect balance to our meal.
