Bolthouse Farms sent me their Limited Edition Holiday Flavors and I knew immediately I’d have to find a way to incorporate them into my Eggnog Oatmeal Muffins!
1 cup oatmeal
1 cup Bolthouse Farms Holiday Nog
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup brown sugar
1/2 cup applesauce
To start, you’re going to need to soak your oatmeal in the Bolthouse Farms Holiday Nog. You’ll do this by combining 1 cup of oatmeal with 1 cup of Holiday Nog.
The oats will need to soak for about an hour. You’re going to want the nog to be fully absorbed by the oatmeal before you create your muffin batter.
When it’s time to bake, pre-heat your oven to 350 degrees Fahrenheit. Next, combine 1 cup flour, 1 tsp baking powder, 1/2 tsp baking soda, and 1/2 cup brown sugar in a mixing bowl.
To the dry ingredients, add in the nog oatmeal mixture, 1/2 cup applesauce, and 1 egg. Mix until all of the ingredients are combined.
Next, add the batter to your muffin tins. Be sure to spray the muffin tin or the paper liners to ensure the muffins don’t stick.
Bake the muffins (recipe makes 12) at 350 for 25-30 minutes.
These muffins are absolutely delicious and have been a perfect addition to my breakfasts! I have yet to try it, but I think this recipe would be awesome with the Bolthouse Farms Pumpkin Spice Latte!
