This week I made another Mason jar meal for my lunches. So far this month I’ve made Mason Jar Greek Salads, Asian Chicken Salads, and Buffalo Chicken Soup. This week I busted out my new spiralizer and made buffalo chicken zoodle salads!
I started by making buffalo chicken in the Crockpot. I simply added 4 raw chicken breasts to my Crockpot with 1 cup of buffalo sauce and then cooked the chicken on low for 8 hours before shredding it.
Next I used the spiralizer to turn my zucchini into noodles – Zoodles (I used 6 medium-sized zucchini and had enough for 5 cups). Next I sautéed the zoodles for about 3 minutes in 1 tbsp of olive oil and then set them aside to cool.
With everything cooked and ready, I assembled my buffalo chicken zoodle salads.
Buffalo Chicken Zoodle Salad
Ingredients For 5 Jars
-4 chicken breasts and 1 cup of buffalo sauce for the Crockpot Buffalo Chicken
-10 tbsp ranch dressing
-5 stalks of celery, chopped
-1/4 cup of blue cheese
-5 cups sautéed zoodles (6 medium-sized zucchini and 1 tbsp olive oil)
Ingredients Per Jar (Layer 1 is at the bottom)
Layer 1 – 3/4 cup Crockpot buffalo chicken
Layer 2 – 2 tbsp ranch dressing (I used Bolthouse Farms Ranch)
Layer 3 – 1 stalk of celery, chopped
Layer 4 -1 tbsp blue cheese
Layer 5 -1 cup sautéed zoodles
Note — You can easily replace the zoodles with chopped romaine lettuce.
