Another ‘back to basics’ for me this week was meal prepping. With a crazy week behind me and an insane week before me, I went into last Sunday knowing that I’d need to do a lot of prep work for the week ahead.
Meal prepping for me first starts with a grocery list. Meal prep is really about making large quantities of foods that can be used in a lot of different recipes throughout the week, so having a list is really important. On my list last week was…
- Chicken breasts
- Trader Joe’s Carne Asada steak
- Olive oil
- Coconut oil spray
- Bell peppers
- and a few other odds and ends
As we have a CSA each week, I really don’t have to buy many vegetables.
The first thing I did was roast boneless, skinless chicken breasts at 350 degrees for 35-40 minutes (or until cooked through). I just seasoned the breasts with salt and pepper and then threw them in the oven.
While the chicken cooked I cooked up the carne asada steak on the stove top. I sprayed the pan with cooking spray and then browned the meat until cooked to medium. Once the steak had cooled a bit I sliced it and added it to a ziploc container.
I also sauteed a number of vegetables including zucchini, bell peppers, and eggplant.
I sliced up the chicken breast and then threw both the chicken and the vegetables into ziploc containers.
With my ingredients all cooked it was easy for me to throw together various breakfasts, lunches, and dinners throughout the week. Meals included…

- chicken, zucchini, and eggplant with marinara sauce and parmesan cheese
- steak burrito with guacamole

Prepping foods for the week ahead is really important for me especially when I’m busy and trying to stay in good shape. When I’m busy I need to be able to grab something quickly, which usually means carbohydrates for me. Having the protein and veggies cooked and ready to go really helped me to be successful this week!
If you didn’t see it on my Instagram yesterday, Neal and I ended the AdvoCare 24 Day Challenge yesterday and were both really excited about our results. We both feel refreshed, toned, energized, and healthy!
Finishing the challenge with healthy meals was really key and I owe a lot of my week to the prep I did on Sunday… now I just need to make that a part of every Sunday!
